Everyone wants to make nacho dip. But when you heat regular cheese, the fats can melt away from the rest of the cheese solids, leaving you with a pool of oil and a lumpy, stringy mess. Enter processed cheese, of which American cheese is a particular type. This stuff is consistent by design, has a longer shelf-life, is usually cheaper than natural cheese, and melts like a dream. But… how? What arcane science imbued natural cheese with such unnatural properties? Here in the U.S., the FDA has crafted an exhaustively specific legal definition of processed cheese. The short version is that it’s a type of food made by pulverizing, heating, and mixing actual cheese of one or more types with an emulsifier into a homogeneous plastic mass. That’s “plastic” as in the physical definition, i.e. “a substance easily shaped or molded”. Processed cheese isn’t made of actual plastic. But it can contain water, salt, artificial color, flavorings, and this stuff: Emulsifying agents: monosodium phosphate,disodium phosphate, dipotassium phosphate, trisodium phosphate, sodium metaphosphate (sodium hexametaphosphate), sodium acid pyrophosphate, tetrasodium pyrophosphate, sodium aluminum phosphate, sodium citrate, potassium citrate, calcium citrate, sodium tartrate, and sodium potassium tartrate; Additional fat: cream, anhydrous milkfat, and dehydrated cream; Acidifying agents: vinegar, lactic acid, citric acid, acetic acid, and phosphoric acid; Mold inhibitors: sorbic acid, potassium sorbate, sodium sorbate, sodium propionate, and calcium propionate; Anti-sticking agent: lecithin. The key to processed cheese’s smoothness is the emulsifying agents. An emulsion is a mixture of two liquids that don’t usually mix. Like oil and water. No matter how hard you stir or shake them together, they’ll separate back out. But emulsifiers make the two play nice, chemically speaking. That’s because they interact with both liquids, grabbing globules of one and suspending them evenly throughout the other. Cheese (and milk, for that matter) is made up of fats and oil-soluble substances plus a solution of water-soluble proteins and minerals. The added emulsifiers keep them blended together, even when they’re heated. The other optional ingredients are texture and flavor enhancers, preservatives, and cheesemaking shortcuts designed to speed the manufacturing process along. But as long as the finished cheese has moisture, fat, and pH levels that closely resemble those of its actual cheese ingredients, the stuff can legally be called “pasteurized process cheese.” And if it’s made from cheddar, washed curd, Colby, or granular cheese, it can be called “American cheese.” But you may have noticed some extra words creeping in on labels, dubbing the stuff pasteurized process cheese food or spread or product. Those designations indicate that other ingredients have been put in that reduce the amount of actual cheese in the finished food. That’s because ‘prime cut’ suggests that it is a single cut of the best meat from the animal. But this isn’t the case in many restaurants. Actually, what if I told you they chop up all the leftover meat and glue it back together? Does the word transglutaminase ring a bell? This is the name for the meat glue they use to glue the low quality meat back together to make you think you’re getting a full piece. This is more than a lie, this is disgusting. Besides the fact that it is using the worst tiny cuts of meat, it’s made from ammonia. The stuff used in fertilizers and oven cleaners. They try to fight back by claiming it kills E Coli, which should not be something we should be worried about being on meat anyway. Justifying making people unknowingly eat ammonia just so they can pass off scrap meat does not seem ethical in the least. Be very careful where you eat your steak! See, this is why being a vegetarian seems like a safer option! Or maybe seafood…. #9 Imitation Crab Or maybe not seafood. For one, crustaceans feed off the worst possible debris on the bottom of the ocean. The only nastier creature is shrimp. This stuff they eat doesn’t magically disappear when they are caught and cooked either. There’s still…stuff in it that we eat…secondhand. Nevertheless, it’s expensive to buy fresh crab and shrimp, but you can get crab cakes and other delicacies at the grocery store for a pretty good price. Why? It’s usually because it is fake, under the guise of imitation crab meat. Imitation crab meat is made from the remains of other fish that are mushed together, and injected into a mold. They mince and mince random fish, whatever they can get their hands on, until it turns into the same texture as crab. It is then created into a paste that is frozen and then shaved into crab-like flakes. To make it taste like crab, they just add flavor and paint it to look like crab. So, next time you go for some cheap crab, remember that’s probably, beaten, frozen, shaved, and painted fish remains. I kind of like imitation crab but not really a fan of this process...it still tastes good so if you’re okay with this…then go ahead. #8 Parmesan Cheese Parmesan cheese is delicious! Especially, real authentic parmesan cheese. But did you know that companies will usually lie about what’s in “parmesan”? The FDA regulations make it legal to sell fake Parmesan cheese. This is some scary stuff. There are two huge deal breakers with parmesan. One is grated parmesan in the shaker. Most of the time, cellulose and mold inhibitor chemicals are added so it won’t clump. Cellulose, not cellulite, that’s just an after effect. Cellulose comes from ground up wood pulp and is considered “harmless and organic matter”. They usually add 2-4% cellulose, but the FDA doesn’t restrict it. In fact, some has been proven to carry 20%! That’s a lot of cellulose on your pasta! The saddest part is, this is just allowed in the United States. Parmesan cheese legally means the kind of cheese that comes from Parma, Italy. But in the US, you can call it parmesan when it’s just dehydrated, grated mozzarella. This is like the Kobe beef of cheeses. Most of the time, when you get parmesan, it’s not parmesan. It’s cellulose and a mixture of cheap cheeses. #7 Egg Substitute This one is a little different. No one knows what it is, but many believe that it’s a great substitute for people with egg allergies. But really, it’s still just eggs. They take mostly egg whites, fresh, frozen, or powdered, and add other ingredients. But not much. They actually just contain 99% egg whites! There’s not actually much substituting going on. It might be easier for people who don’t want to go to the trouble dealing with egg shells and yolks slipping everywhere, etc. In reality, it is called egg substitute because of that 1% that’s just artificial coloring, salt, onion powder, and who knows what else. Why? Why would they just flavor egg whites? “Egg substitute” is kind of misleading and should be for people with egg allergies who need a substitute. It shouldn’t just be eggs. Maybe it’s substituting something else? Is it the bottle substituting for the shell? Bottom line is…this isn’t egg substitute, it’s just expensive eggs.

My first time making these didn't really turned out how I wanted them to be. Don't get me wrong they tasted amazing the only problem was that the balls didn't hold up their shape. Once it was time of frying the balls will always crack open! Not really a fun experience! So, I thought maybe the cause of the problem was the boiled potato being not yet completely cool. Which then caused them to break while frying! So, I tried making this another time! I didn't give up there! The second time I tried making these again I made sure I added cornflour to the potato mixture and freeze them in the freezer for at least 1 hour before frying. Luckily this time they didn't break! Caseificio La Fattoria in Battipaglia, in the Campania region of southern Italy, makes fresh mozzarella with buffalo milk that can weigh up to 88 lbs. The dairy makes the mozzarella in a variety of shapes and sizes, but its brightest star is called Zizzona, which takes its name from a word in the local dialect that means 'a mother's breast.' "The Zizzona of Battipaglia is a very big buffalo mozzarella," Production Manager Gennaro Paraggio told INSIDER. "The peculiarity of it is that there is a nipple on top of the mozzarella which reminds of a mother's breast because it releases milk. The name Zizzona comes from a word in our local dialect which means 'a mother's breast' that releases milk." Caseificio La Fattoria was established in 1988 by the Paraggio family to honor a generations-old tradition started in 1930. Overall, the dairy makes over 9 tons of mozzarella a day, 4,000 of which are Zizzonas. "The Zizzona is made so that the dough inside is solid, strong, but it also has to have a web-like structure," said Paraggio. "This means it has to be able to hold milk inside. The same milk that is used during production. So that when you cut it open, the plate is filled with milk, and when you eat it, your mouth is filled with fresh milk as well." You have to go out of your way to buy raw organic cheese and it’s expensive, around $30 a pound and up, so if you are not sure if your cheese is high quality, organic, or raw, then it’s not. Organic The reason you should always buy cheese organic is that fat carries the largest doses of the hormones and antibiotics that are used in non-organic livestock. Organic grass-fed cheese is free of antibiotics and growth hormones. And Non-organic most often has gmo’s in it. Rennet An ingredient in cheese called Rennet is an enzyme used to turn milk into curd for cheese making. There are two types of rennet that are commonly used. 1. Is animal rennet which is traditionally used and it’s taken from calfs, yes baby cows since you can’t get this from adult cows, so if you wouldn’t eat veal because of the abuse of animals such as taking away baby cows from their mother and killing them, or you are vegetarian, than don’t eat cheese. But most cheese especially in the US from: 2. Vegetable or fermented rennet. Most vegetable and all fermented or FPC rennet is genetically modified or GMO this is illegal in cheeses sold in Europe, but is legal in the US. If you want to avoid the abuse of animal situation, then avoid it all together or else look for organic cheese from vegetable rennet. Food Combining Another a big cause of stomach issues having to do with cheese is poor food combining. Mixing cheese with meat or cheese with starch like pasta is bad food combining since meat, dairy and starch are digested in different areas of the body with different enzymes so this can cause gas, bloating acid reflux and other digestive problems leading to sickness or disease. That means avoiding cheeseburgers, meat sauce with cheese, grilled cheese, Mac and cheese, pizza but for more on this see my blog on food combining. Cheeses to especially avoid: 90% of standard grocery store cheeses are made from the milk of CAFO cows or factory farms, which are terrible for the cow, for us, and the environment. - Avoid American Cheese – not cheese but a “cheese food” since it is not 100% cheese. It has food colorings and other unhealthy ingredients like yellow 6 and tartrazine. Symptoms of a milk allergy can include asthma, eczema, gastrointestinal distress, as well as bleeding, pneumonia, and even anaphylaxis (shock). Kraft Foods Group said on Friday it is voluntarily recalling 7,691 cases of some varieties of its Kraft American Singles as a precautionary measure after a supplier failed to store an ingredient correctly. The Northfield, Illinois-based company said the recall affects four varieties of Kraft American Singles Pasteurized Prepared Cheese Product. The recall is for products with "Best When Used By" dates of Feb. 20, 2015, and Feb. 21, 2015. The company began in 1953 as Insta-Burger King, a Jacksonville, Florida-based restaurant chain. Conversely, BK has introduced many products which failed to catch hold in the marketplace. Some of these failures in the United States have seen success in foreign markets, where BK has also tailored its menu for regional tastes. From 2002 to 2010, Burger King aggressively targeted the 18--34 male demographic with larger products that often carried correspondingly large amounts of unhealthy fats and trans-fats. This tactic would eventually come to hurt the company's financial underpinnings and cast a negative pall on its earnings. Beginning in 2011, the company began to move away from the previous male-oriented menu and introduce new menu items, product reformulations, and packaging as part of 3G Capital's restructuring plans of the company.
