This video ventures into a famous roasted duck producer somewhere north of Kuala Lumpur city. It documents every step taken to create the perfect roasted duck in a well organized manner that reminds us of an assembly line. The owner of this "roasted duck processing line" is none other than the son of a famed roasted duck stall operator at Petaling Street in the 60s. Now, this 2nd generation owner is well equipped with first-hand knowledge and traditional "secrets" to become the roasted duck "sifu" in the city. In fact he studied culinary science and has worked in a Japanese restaurant before. Nevertheless, combining experience with his family's secret formula , he has perfected this traditional favourite for all to savour. It begins with the right ingredients for the stuffing, properly dipping the stuffed duck into a special sauce mixture, then letting it hang to marinade gently before being put into a "sauna" roaster to let it mature into golden red brown roasted duck. Some of the "equipment" used are "inherited" from the past too.  Besides these roasted variety, the "processing line" also produce the Peking duck variety upon request. Once done the roasted duck are packed hygienically and  elegantly for takeaways. One of the most important ingredients of the roasted duck is the magic gravy that must accompany the roasted duck serving ! The video shows, in brief, how this unique magic gravy is made. Then, we went to try another famous Chinese street food, the Shuangpinai double skinned milk, served to you in the alleyways and street markets of Guangdong. It was sweet, and almost like an egg pudding. Then we went to have another specialty Chinese street food, the guilinggao bitter jelly pudding, and a douhua silken tofu dish, on our way to a huge Chinese feast. How to make Peking Duck (Beijing Roast Duck)

*Please note that 45 min. at 300 F or 139 C is for Convection Oven ONLY. Conventional oven requires a longer cooking time. Ingredients: Level: Difficulty Time: 2 Days Ingredients: Duck 2 cups of vinegar 2 cups of honey 2 cups of water 1 Maltose 2 tbsp sugar 2 tbsp garlic powder 1 tbsp white pepper 1 tbsp five spice powder 1 tbsp ginger powder 1 tbsp salt 4 tbsp hoisin sauce Licorice Star Anise Dried Citrus Peel Cucumber Green Onion Ginger Tortilla wrap (optional) Directions: Pump air underneath the skin through the neck cavity to separate the skin from the fat and the flesh. This process will make the skin very crispy. Cut off the wings and the feet. Then make a incision on the bottom as shown here, remove the innards. Keep the hearts and gizzard, I'm going to make a dish off of them in the future episode. Wash the duck thoroughly. Wash the cavity a few times to remove any residue. Here are the ingredients we are going to put inside the duck. Next, combined the ingredients into the hoisin sauce. Then put the mixture inside the duck's cavity. Put in 1 slice of ginger and one green onion. This will give it an aromatic flavor on the inside. Use a skewer to sew up the cavity. First, hold the skin together then slowly puncture through, then overlap the skin and continue sewing until there is no holes left. Make sure there is nothing leaking out of it. I use a hook to hang the duck, if you don't have one you can just use strings and tied it around it's wings and neck. Next, refrigerate the duck for 24 hrs laying the duck belly side down. Next in a pot add in 2 gallon of water, add Licorice, star anise, and dried citrus peel. This add an aromatic flavor to the skin. Boil for about 15 to 20 min. We are going to make glazing for the duck. In a bowl add 2 cup or ml of honey, 1 tbsp of lemon juice, 2 cup or 473 ml of vinegar and 1 maltose. The maltose is very sticky so we want to make it into a more manageable form. Boil 2 cup of water and add maltose into the hot water. Then mix the maltose with the other ingredients. Next, soaked the duck in boiling water for 15-20 secs. This process quickly tightens the skin back up.Then pour the mixture over the duck one at a time. Hang the duck to dry for a minimum of 5 hrs. use a fan to blow the duck dry until the skin become springy. Preheat the oven to 350F, after you put in the duck turn the temperature to 300F and cook for 40-45 min. Put a drip pan underneath to catch the fat. Turn the duck 180 degree after 20min of cooking, this ensure even cooking and browning of the skin. After the duck is fully cooked, turn the fire off and leave it in the oven for additionally 15 min. This will let the juice be reabsorb into the meat making the meat very juicy and tender. Now, I'm going to show you how to cut the meat. First, locate the sternum, make a cut near the sternum, then make a cut on the side of the duck. Next, cut sideway diagonally. Now it's done, serve it with spring onion, cucumber and hoisin sauce. A Delicious Treat It often just takes one good thing to light up a person's day. For many, it could be the delicious roast duck that is easily found throughout Malaysia, whether on the roadside or in restaurants. Roast duck has become a popular dish in Malaysia, that it is featured on almost every roast meats establishment. Not only are they a common sight in coffee shop stalls and restaurants, what's particularly interesting about roast duck is that it is frequently found along road side stalls, which sell nothing but roast duck, whether whole or in pieces. Some of these road side stalls are extended from the operator's houses, while other vendors even have their own specialty van just to sell the dish! There are a few methods to roast duck, and most vendors either use gas or charcoal. The ducks are usually roasted beforehand and brought to the stall, then hung up for the hungry customers to choose. The merchant will take and prepare the duck according to orders. Unlike other roast meats such as char siew or roast chicken, roast duck places a rather large importance on the sauce. The sauce is perhaps the biggest differentiator between the numerous roast duck sellers across Malaysia—their business can sometimes solely depend just on the quality of the accompanying sauce.

Put duck hook on back so that it can be hanged. Put ingredients B in a pan and bring to boil. Using a ladle pour the liquid over the duck few time so that the skin is scalded. Hang duck to dry overnight. Heat oven for 15 minutes at 200°C and put the duck in to roast (you may need to take the duck hook out if you cannot close the oven door) for one hour.

A good braised duck is cooked with love in a pot of soy sauce based braising liquid with essential aromatics. We added chuan xiong (ligusticum) and dried mandarin peels on top of the usual cinnamon sticks, star anise and cloves. Using quality soy sauces also makes a big difference to the taste. I go to Beijing Lu to a Cantonese Preserved Meat store... to learn about Cantonese Preserved Meat. Ken mentions around 2:30 how many of the preserved meats are known as 'Wax ____' due to the character used. To be honest... most of the stuff shown here tastes, to me, like it's half-wax anyway. I am NOT a fan of Cantonese sausage. It manages to be oversweet, waxy, and greasy all at the same time. Don't even get me started on the smell. All in all, not an aspect of Cantonese culture I miss. And lest you think I'm being culturally insensitive: I LOVE the sausage from Northern China; I LOVE the preserved fish and duck from Hunan province; and I LOVE the dried rabbit from Sichuan province. It's just the Cantonese stuff I can't stand. I'd rather walk through the Durian section in a Cantonese supermarket than the Dried Meat section--and Durian is bad enough that it's been banned in many buildings and public transport across South Asia. 4:44 "Ours are considerably bigger"... hahaha... Homemade Chinese Sausage Cantonese Lap Cheong Recipe [广式腊肠]

Cantonese sausage is very popular in the southern Chinese provinces such as Guangdong, Fujian, and Hong Kong. We normally make sausage in the winter because it requires the right temperature, humidity. But today I am going to show you how to make sausage in the summer with a fridge. It is super easy. Homemade Sichuan Spicy and Numbing Sausage: https://youtu.be/fghPpLIewGg Sticky rice dumpling recipe: https://youtu.be/xZ3QQxpgIs8 Taro cake recipe: https://youtu.be/ah1uhra2zfc Zongzi recipe: https://youtu.be/VrbDvc2Aw40 Claypot rice recipe: https://youtu.be/rOiNlnc6Cz0 Sausage stir fry with snow peas: https://youtu.be/-50kfs0zWJM INGREDIENT LIST - 2 kg of pork (I combined 1 kg of pork shoulder and 1 kg of pork belly together) - 40 grams (2 tbsp +1 tsp) of salt - 130 gram (10 tbsp +1 tsp) of sugar - 5 grams (1.5 tsp) of red yeast powder (optional, you can skip it or use food coloring) [Amazon link: https://amzn.to/2rHmSJ7] - 60 grams (4.5 tbsp) of high-level alcohol (at least 30%) - 40 grams (2 tbsp +1 tsp) of soy sauce - Lamp or pork sausage casing: https://amzn.to/2IiBNkj - Some rope to tie the sausage - Sausage stuffer Amazon link: https://amzn.to/2Q7Zu5b INSTRUCTION - You can use pork belly, pork shoulder, pork butt. I like to combine 1 part of pork shoulder and 1 part of pork belly together. Pork belly is about 50% fat and the pork shoulder is pretty lean. By combing 2 kinds of cut together, you control the fat ratio in between 25-30%. You don’t want to use completely lean meat because the sausage will dry out as the day goes by. Without the fat, it will be tough, dry, and difficult to chew. The more fat it has, the juicer it will be. If you do want to use 50% fat ratio, go ahead but it just not something that I prefer. - Cut all the pork into thick strips first. Then slice it into small pieces. Use half frozen pork, it will be easier to work with. - The reason I don’t use ground pork is that it does make a big difference. I prefer the sausage that when you take a bite, there are real meat pieces inside. This is the way how the traditional Chinese sausage is made for centuries. You could use ground meat thought but it does come out differently in texture. It might look like too much work but it is definitely worth it to me. - Next, combine all the seasoning together and mix well: 40 grams of salt, 130 gram of sugar, 1.5 tsp of red yeast powder, 40 grams of soy sauce, 60 grams of high-level alcohol. - Red yeast powder is an optional ingredient, you can skip it or use food coloring. It doesn’t affect the taste at all. - The alcohol content needs to be at least 30%. The higher, the better. Also, you want to use the alcohol that doesn’t have that much flavor so it doesn’t affect the final taste. Do not skip the alcohol because it has many purposes in this recipe. It kills the bacteria, also changes the flavor and texture of the fat as the day goes by. - Pour the sauce into the meat. Mix this until well combined. Let it sit in the fridge for 2 hours and we are going to prepare our sausage stuffer and casing. - There are many types of casing. For this recipe, you want to use lamb or pork casing. It stored with a lot of salt. Wash off all the salt then soak it in clean water. - Besides that, you will also need some rope to tie the sausage. - Take one casing. Find the end and put it on the sausage stuffer tube. Make sure you don’t have sharp nails or else you might cut the casing by accident. Keep doing it until you reach the end. Tie a knot at the end to close it. - Put the meat into the container. Tug it tightly so you don’t get too many bubbles. Start pressing the sausage stuffer and the sausage will come out. You want to do this evenly. Once it reaches the length that you like, Pinch the sausage a little bit and tie it with the rope. We are not using ground meat making sausage so the pinch and twist method won’t work here. - You just keep doing this until all your meat is filled. It is a bit time-consuming. It took me about 40 minutes to fill up 2 kg of sausage. - Use a toothpick to poke all the air bubbles so the sausage can be firm and tight. - Put all the sausage on a drying rack. and let it sit in the fridge uncovered for 10 - 15 days. Depends on the humidity and the temperature. If you see the surface is completely dry, that means it is good. The final product looks a little bit darker than the ones you buy from the store, that is because I used the nature red yeast powder for color instead of food coloring. Also, the store-bought sausage contains much more fat. Lean meat usually courses darker result but it is definitely delicious. - Just simply store them in a sealable bag. It will last 2 months in the fridge and 6 months in the freezer. Enjoy your meal! I was super lucky to be able to try it from a family run joint that has been making this duck for generations! The local snacks that I tried afterwards were just mind blowing, especially the cold chicken sliver noodles. I had to leave Chengdu to find this local duck, in Pengzhou, where street food is plenty and ducks like this can be found all throughout the city, whether in family run shops like this, or hanging over the sidewalk ready to be served.
